Salsa Contest 2018

Every year at Tomato Fest our employees participate in a salsa tasting contest. Here are the recipes from this year!

#1 Spicy Lee Salsa            (3rd Place Winner)


Ingredients

Carrots

Garlic

Habanero Peppers

Salt

LIme Juice

White Wine Vinegar

Onions

Directions

Promises to give the winning combination if he wins! For now he says he puts it all together and tweaks it to taste.

#2 Cherry Tomato Salsa


Ingredients

1 yellow onion

2 1/2 bundles of cilantro

7 chili peppers

2 tbsp salt

Juice from 1 1/2 limes

Assorted cherry tomatoes  (sungold, yellow pear, green grape, sweet million, red pear, grape, green zebra)

Directions

Coarsely chop and mix ingredients together in a bowl.

#3 Grandma Elaina’s Salsa (1st Place Winner)


Ingredients

2 pounds ground beef

12 San Marzano or Roma tomatoes

1 bulb of garlic

1 onion

1/2 red pepper

Sesame oil

Black pepper, oregano, salt, fresh basil

2 tbsp Worchestershire sauce

4 tbsp tomato sauce

3 to 4 tbsp brown sugar

Directions

Turn on your favorite music, so the salsa gets the taste of your happiness!

Sauce:

In blender add chopped onion, 12 chopped tomatoes, 1/2 garlic, 1/2 red pepper. DON’T ADD WATER

Beef:

Add 3 to 4 tbsp sesame oil to pan and let heat, add remaining 1/2 of garlic, cook for 2 min. Add ground beef, 1/2 tsp of black pepper, 4 tsp oregano, tsp salt, and Worcestershire. Cook until all the meat is grey and loose (don’t let the meat form lumps, it has to be loose and tiny).

Add the sauce to the beef and tomato paste, sesame oil, brown sugar and taste to adjust salt. Let boil with the lid on, then lower the heat so the flavors are concentrated.

#4 Mom’s Green Salsa


Ingredients

1 28oz can green enchilada sauce

1 thick bunch of green onions

2 tsp cumin

2 tbsp garlic powder

1 tbsp salt

1 bunch cilantro

1 onion

7-10 jalapeños

30-40 tomatillos

1 bulb garlic

Directions

Blend 1/2 tomatillos with peppers in blender. Finely chop remaining 1/2 tomatillos and green onions. Chopster chop garlic, onion, and cilantro. Combine and mix all ingredients. Refrigerate at least 2 hours.

#5 Hector’s Roasted Tomato Salsa


Ingredients

5 roasted tomatoes

3 roasted jalapenos

2 garlic cloves

2 roasted chiles de arbol

salt to taste

2tbsp diced yellow onions

10-12 sprigs of cilantro

Directions

Roast tomatoes and jalapenos in a pan until they are roasted on all sides. Smash garlic with tbsp water and a dash of salt. Roast chile de arbol. Grind chiles with smashed garlic. Mash tomatoes and jalapenos and add to mixture. Add chopped onion and cilantro.

#6 Reynalda’s World Famous Red Sauce


Ingredients

10 Roma tomatoes

15 red cayenne peppers

1 garlic clove

pinch of salt

Directions

Roast chilles tomatoes, and garlic under medium heat until slightly cooked and toasted. Gather all tomatoes, peppers, and garlic. Put all ingredients in a blender (or molcajete). Blend until it is liquid consistency. Pour salsa in container, add salt,and mix thoroughly

Serve and enjoy!

#7 Fire Roasted Peach Salsa (2nd Place Winner)


Ingredients

Red onion

Heirloom tomatoes (Orange strawberry, beefsteak, and roma)

Ripe local peaches

A bulb of garlic

Jalapenos

CIlantro

Avocado oil for bbq

Lime juice

Himalayan pink salt

Directions

Grill garlic, peppers, onion, and peaches in oil over flame till caramelized and seared.

Dice all ingredients and toss with lime juice and pink salt to taste.

Let sit over night for best flavor.

#10 Confetti Salsa


Ingredients

2 cups of chopped tomatoes (Roma style preferred)

1 can of yellow corn, drained

1 can of black beans, drained

1 chopped onion (as hot/ spicy as you want)

3 seeded and chopped jalapenos

1 bunch of chopped cilantro

1/4 cup of lime juice

2 tbsp of olive oil

1/2 tsp of salt (to taste)

1/2 tsp of pepper (to taste)

Tortilla chips

Directions

Place all ingredients (except tortilla chips) in a large bowl. Stir to combine. Serve with chips. Yum.

2017 #2 Average Joe’s Salsa


Ingredients

A bunch of tomatoes (10 fresh, any variety)

3 jalapeños (seeded)

5 cloves of garlic

Handful of cilantro

A bit of salt

Lemon or lime juice (just a squeeze)

Directions

Throw it all in  a blender, food processor, or if you feel like chopping it all up (GO FOR IT)! Get it all mixed up together, put it in a bowl and enjoy.
