Pep’s Strawberry Pie

For topping

  • 1 1/2 cups sliced strawberries
  • 1/2 cup water + 1 tbsp
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1/2 tsp almond extract
  • several drops red food coloring

For filling

  • 1- 8 oz package cream cheese (room temperature)
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 cup whipping cream or cool whip

 

  • 1 baked and cooled pie shell 

For topping and glaze-

  1. Bring first 4 ingredients (except 1 tablespoon water) to boil in a medium saucepan. Mashing berries and let boil for 5 minutes.
  2. Drain off juice from berries. Set berries aside.
  3. Combine cornstarch and 1 tbsp water to drained off juice.
  4. Return juice mixture to heat. Stir until clear and thickened thickened, creating a glaze.
  5. Remove from heat. Add lemon juice, almond extract and food coloring to glaze. 

For Filling

  1. Beat cream cheese with sugar and vanilla till smooth.
  2. Fold in 1 cup whipping cream or cool whip.

Assemble

  1. Turn filling into cooled pie shell. 
  2. Top filling with berry mixture.
  3. Top berries with the glaze.
  4. Refrigerate until cooled.
  5. Enjoy!
