Pep’s Strawberry Pie
For topping
- 1 1/2 cups sliced strawberries
- 1/2 cup water + 1 tbsp
- 1/2 cup sugar
- 1/8 tsp salt
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 tsp almond extract
- several drops red food coloring
For filling
- 1- 8 oz package cream cheese (room temperature)
- 1/2 cup sugar
- 1 tsp vanilla
- 1 cup whipping cream or cool whip
- 1 baked and cooled pie shell
For topping and glaze-
- Bring first 4 ingredients (except 1 tablespoon water) to boil in a medium saucepan. Mashing berries and let boil for 5 minutes.
- Drain off juice from berries. Set berries aside.
- Combine cornstarch and 1 tbsp water to drained off juice.
- Return juice mixture to heat. Stir until clear and thickened thickened, creating a glaze.
- Remove from heat. Add lemon juice, almond extract and food coloring to glaze.
For Filling
- Beat cream cheese with sugar and vanilla till smooth.
- Fold in 1 cup whipping cream or cool whip.
Assemble
- Turn filling into cooled pie shell.
- Top filling with berry mixture.
- Top berries with the glaze.
- Refrigerate until cooled.
- Enjoy!
